Vineyard From the Defiance Vineyard on Felton Road, Bannockburn — a site once mined for gold, now tucked into a sheltered valley. Hand-harvested, whole-bunch pressed, and fermented in a mix of stainless steel (72%) and older French oak (28%), with fermentation stopped to retain some residual sweetness.
Wine Aromas of toffee apple, lemon curd, pear, and white melon with a hint of citrus blossom, leading to a lush, full palate of pineapple, nashi pear, ginger, and lemon sherbet, with excellent balance and a touch of sweetness on the finish.
