Founded in 1912, Francesco Fabiano and his son Sergio began to sell their wines in Venice, expanded and moved to Verona in the 1950's and by the 1970's became one of the largest wine producers in Italy. The commercial growth of the 1980's and 1990's saw Fabiano exported to all the main countries of the world, making it one of the main wineries of the Verona and national oenology.
From the 2000s, Fabiano shifted focus from volume to its quality wines. As well as Ripasso and the high-quality white Lugana, they had been producing Amarone since 1966 and today, fourth generation Alessandro Fabiano runs this century year old winery now known for its limited production, premium wines. They still use the quality vineyards of historical growers, bottle some wines in the original Sona Cellar, but have their Headquarters in Valpolicella.
Amarone is a wine of antique lineage. The grapes are all grown in the classic zone of Valpolicella and are hand-picked, uniquely dried, then pressed and vinified according to the age-old traditional method. Exhibiting a characteristic perfume and pouring deep pomegranate in colour from the prolonged ageing, they are extremely age worthy and collectable.
Here, the grapes are from hilly vineyards 200-350m above sea level in the municipality of Marano, Valpolicella. The grapes are dried for about 100 days, with 60% then later aged for 24 months in 20-30-50hl Slavonian oak barrels and the remaining in medium toasted Allier oak barrels for 18 months.
Intense ruby in colour with notes of vanilla, cherry, plum and coffee. Full of flavour, warm and velvety, pair with braised meat, game, cheese or at the end of a meal, it is extremely praised and benefits from decanting for an hour.
